Eggless Vanilla Cupcake With Chocolate Frosting | Kiddie's Corner

Ingredients: ( Makes 24 cupcakes or 48 or more mini cupcakes based on the size of the cupcake liners.)

For the Cake
340 gm (2 1/2 cups) plain flour
130 gm (1/2 cup + 4 tbsp) cornstarch or cornflour
2 tsp baking powder
1 tsp baking soda
500 ml (2 cups) milk + 2 tbsp vinegar
440 gm (2 cup) granulated sugar*
250 ml (1 cup) vegetable oil (preferably rice bran)
2 tsp vanilla extract
2 tbsp water

 Method:

- Line a 12 numbered cupcake or muffin pan with cupcake liners.
- In a bowl assemble all the dry ingredients the plain flour, corn starch, baking powder and soda together and sieve together once.
- Pre heat the oven to 175 C/350 F.
- In another bowl put in the milk and vinegar and allow it to sit for about five minutes. Put in the granulated sugar and oil and blend with a blender until the sugar dissolves. Stir in the vanilla extract.
- Now put in the sieved dry ingredients into the liquid ingredients, add the additonal 2 tbsp water and blend with a blender until well mixed about 3 to 4 minutes.
- With the help of an ice cream scoop or a spoon drop the batter into the cupcake liners and bake for about 20 minutes for regular cupcakes and 10 minutes for mini cupcakes.
 
 Ingredients:

For the Chocolate Buttercream Icing

200 gm (1 cup) butter (I used salted butter)
455 gm (3 to 3 1/2 cups) icing, powdered or confectioners sugar
100 gm (1/2 cup) cocoa powder
2 tsp vanilla extract or 1 tsp vanilla extract + 1 tsp almond extract or 1 tsp vanilla extract + 1 tsp orange extract
2 tbsp cream
2 tbsp milk
or
4 tbsp milk

Method:

- In a stand mixer with the paddle attachment or in a food processor or in a large bowl using a hand beater or a wire whisk, cream the butter and stir in the confectioners/powdered sugar and cocoa, mix on low speed and cream again until soft and creamy.
- Stir in the vanilla extract or other flavouring of choice and beat again for a couple of minutes.
- This is a flexible recipe and if your icing is stiff add a little more milk, a tablespoon at a time and if your icing is thin, stir in more powdered sugar.
- Spread the icing over the cakes with a spoon or with an icing bag (cut a tiny hole in it). Or put the icing in a bag and fitted with a star or other nozzle of your choice, pipe designs.
- Decorate with sprinkles or other cake decorations of your choice.

Ingredients:

Dry Ingredients
-120gms of regular flour ( 1 cup )
- 1 tsp of baking powder
- ½ tsp of baking soda

Wet Ingredients
- 60ml of Soft Butter (1/3 cup)
- 150gms of Condensed Milk (3/4th cup )
- 1 tsp of Vanilla Paste
- 100ml of Milk (1/2 cup)

Frosting Ingredients
- 100gms of Soft Butter 
- 200gms of Icing Sugar (3/4th cup)
- 1 tsp of Vanilla Paste
- 1 tsp of Milk

Method:

- Mix regular flour, baking powder and baking soda and whisk it
- Mix Soft butter, vanilla paste and milk and whisk it
- Mix the dry ingredients into wet ingredients in two batches
- Add the mixture into cake molds and tap it before keeping it in oven.
- bake the cupcakes at 170 C for 20 minutes
- To prepare the frosting add soft butter, icing sugar, vanilla paste and whisk also add 1 tsp of milk to it
- Once the cupcakes are baked decorate them with the frosting

Ingredients:

2 tbsp butter
2 onions (cut lengthwise)
1.5 tbsp ginger garlic paste
1.5 green bell pepper
4 tomatoes (finely chopped)
Coriander leaves (chopped)
2 tbsp pav bhaji masala
Salt
2 green chillies (finely chopped)
1 tbsp water
1 cup boiled green peas
2 boiled potatoes (diced)
3 cups boiled rice

Method:

- Melt butter in a heated tava and add the onions.
- Let the onions fry till its translucent and not brown.
- Add ginger garlic paste and cook it
- Add capsicum to it and saute them a bit
- Add the tomatoes, coriander, pav bhaji masala, salt, green chillies, mix everything well and cook it till the tomatoes are absolutely soft
- Add water and again mix well everything
- Add green peas, potatoes and mix everything well
- Add rice, coriander leaves, salt to the mixture and mix everything well and its ready to served hot.

Mutton Diryani Recipe

  • Rice - ½ kg or 2 cups
  • Oil - 100ml
  • Chopped onions fine - ¾ cup
  • Ginger garlic paste - 1/4 cup
  • Green chilies - 5
  • Mint leaves - two handfuls
  • Coriander - two handfuls
  • Cloves - 2 to 3
  • Black peppercorns- 3 to 4
  • Bay leaves - 3 to 4 leaves
  • Meat - ½ kg
  • Chili powder - 2 tsp
  • Coriander powder - 1 ½ tsp
  • Salt - to taste
  • Lemon - ½ lemons
  • Water - 4 cups

Method -
  • Wash the rice and put it side for 10-15 minutes.
  • Add oil in a pressure cooker, once it get hot add chopped onion and let them cook for 2 minute.
  • Then add the paste of the Ginger garlic.
  • And cloves , Black peppercorns , Bay leaves and Mint leaves and Stir it for 2 minutes.
  • Now add the mutton pieces and once again Stir it well.
  • Then add the red chilli powder, coriander powder, salt and Stir mixture well and let them cook till consistency of mutton pieces.
  • Then add the washed rice and water.
  • Now mix the mixture well and let them cook on low heat till 2 - 3 whistles
  • Now your Mutton biryani is ready, serve it hot.

Mango Panna

Ingredients:
  • 2 to 3 medium- size raw mangoes
  • 2-3 cardamom , crushed or powdered
  • 4-5 pepper , crushed or powdered ( optional)
  • 2 tsp black salt
  • jaggery/sugar - as per your need
  • Mint leaves
Method:
  • Wash the mangoes well with water and put them in a pressure cooker to cook. After 3 to 4 whistles turn off the heat and let them cool. 
  • Then in a bowl remove the peel and take out the mango pulp . Now add cardamom powder and salt and mix well.
  • Now add almost four cups of water and add sugar or jaggery as per requirement and let it boil for some time.
  • Mango Panna is ready now to drink anytime, you can let it cool and serve it with or without ice.

Batata Wada

Ingredients:
  • Potato - 3 to 4 medium-sized .
  • Gram Flour - 2 cups.
  • Coriander powder - 1 tsp .
  • Chili powder - 1/4 tsp .
  • Garam masala - 1/4 tsp .
  • Aamchur ( Dry mango crushed) Powder - 1/4 tsp .
  • Green chili - 4-5 (chopped)
  • Coriander leaves - 100 g . (Chopped)
  • Ginger - 1 inch long piece. (Chopped)
  • Refined oil - talanyakarita .
  • Salt - as your need.
Method:
  • In a pressure cooker boiled the potatoes and Peel them and keep aside to cool .
  • Now, take gram flour in a bowl add some Coriander leaves, green chilies, salt and water mix it well so that mixture will be smooth and bit thick. Keep the mixture aside for 20 minute.
  • Now, take the boil potatoes add coriander powder, red chili powder, garam masala, coriander leaves, salt, green chilies and Aamchur powder mesh all of them well. Make desired size of small balls of the mixture.
  • Heat oil in a pan, once oil get hot, dip a ball in gram flour mixture and put it in to the pan to fry. now let them fry till they little bit brown in color from both side. Now your Batata Wada is ready take them out from the pan in a plat.
  • You can serve there hot Batata Wada with tomato ketchup or green chili.
